This year, November 7 ushers the Beginning of Winter, which is the 19th solar term in the year, according to the Chinese calendar, and it’s a good time to enjoy some festive chicken dumplings with your loved ones.
As the name of the solar term suggests, winter begins and it’s time for our body and spirit to store energy and be nurtured.
It’s also a good time to keep our emotions stable and calm, avoiding excitement or excessive movement.
The ancient text The Yellow Emperor’s Classic of Internal Medicine advises people to go to bed early and get up late during this time.
Living our daily lives by following the laws of the sun and nature is the best way to nourish our spirit and have a happy and healthy mind.
During the Beginning of Winter solar term, eating tonic food can not only improve the body’s disease resistance, but can also help it recharge while laying a foundation for health in spring and even the whole year.
This is also the season to eat more sweet and warm foods such as chestnuts, sticky rice, chives, chicken, lamb, beef, and silver carp. Of course, vegetables such as soybeans, carrots, rapeseed, mustard greens, and leeks are also indispensable.

Ingredients (serves 4):
50 g peas
50 g canned corn
1 carrot
1 chicken breast
150 g flour
80 ml water
1 ½ teaspoons salt
1 teaspoon white sugar
1 tablespoon light soy sauce
12 chives
100 ml oil
Instructions:
1. Wash and cut the carrots and the chicken.
2. Blanch the chives in boiling water for 5 seconds, then remove.
3. Add water to the flour, add ½ teaspoon of salt, and form a dough. Seal and keep aside.
