
Mixed Lotus Root Slices

The lotus root is slightly sweet and exudes a unique fragrance. It also contains tannins, which can increase the appetite. It’s rich in trace elements such as iron and calcium, as well as plant proteins and vitamins that can replenish qi, improve circulation, and enhance immunity. Traditional Chinese medicine says the lotus root mainly nourishes the stomach and replenishes energy. There are many ways to prepare it. The easiest way is to cut it into thin slices, blanch it, and mix it with a cold dressing to serve as a refreshing appetizer.
Mixed Lotus Root Slices (serves four):
Ingredients:
500g fresh lotus roots
1 green onion, minced
4g ginger, crushed
1 clove of garlic, crushed
1 dried cayenne pepper, cut into small pieces
7 teaspoons white vinegar
4 teaspoons light soy sauce
1 teaspoon sugar
20ml vegetable oil
¼ teaspoon salt
Instructions:
After removing the two ends of the lotus root, peel and cut into thin slices. Soak the slices in a bowl of water with 4 teaspoons of the white vinegar.
Bring a pot of water to a boil, and transfer the lotus root slices to the boiling water, discarding the vinegar water. After just two minutes, remove from the pot and place back in the empty bowl. Add the remaining 3 teaspoons white vinegar, 4 teaspoons light soy sauce, 1 teaspoon sugar, and ¼ teaspoon salt.
Add the ginger, garlic, shredded green onion, and cayenne pepper to the lotus root slices.
Pour 20ml of vegetable oil into a small pot, and heat until it starts to smoke. Immediately pour the hot oil over the bowl of ingredients.
When the frying sound stops, stir everything well and serve.
